As you guys know, I bring my lunch to work 95% of the time. It’s not only a huge money saver, but it’s a lot healthier than grabbing lunch out every day. I often take leftovers, but I do take a salad about 2-3 times a week, and often, it’s this one. I love this salad because it’s simple, has a little bit of sweetness, tartness, and crunch, and is customizable. I usually add some sort of protein on top – precooked chicken or a hard boiled egg are my favorites – and I keep a bottle of lite balsamic dressing in the work fridge. Easy and delicious. You can also swap out the cheese, fruit, nuts… like I said, totally customizable depending on what’s in your fridge. Enjoy!
- 2 oz. Baby Spinach
- .5 oz Crumbled Goat Cheese
- .5 oz Dried Cranberries
- .3 oz Chopped Pecans
- Mix all ingredients in a bowl. Top with dressing of your choice (I like a balsamic vinaigrette). Enjoy!
- You can switch out any of the ingredients for something you like better, add protein, extra veggies - it's totally customizable!
