Balsamic Meatloaf

Ingredients

1/2 pound ground beef (90% or leaner)

1/2 pound ground turkey

1 onion, grated

3 cloves garlic, minced

1/3 cup whole wheat panko

1 Tbsp fresh parsley or 1 Tsp dried

salt and pepper to taste

1/4 cup Ketchup

1/4 cup Balsamic Vinegar

Instructions

Preheat oven to 425 degrees.

In a large bowl, mix ground beef, ground turkey, grated onion, minced garlic, panko, parsley, salt and pepper. Mix well with hands until thoroughly incorporated.

Shape mixture into 3 or 4 oval shaped loaves, depending on your preference.

Mix together ketchup and balsamic vinegar to make a thick sauce. It should be pourable but thick - you may not use the entire amount of each, or you may use more. Spread over each meatloaf.

Bake for 20-25 minutes until cooked through. Three loaves will take closer to 25 minutes. I like to cut through one meatloaf with a fork to check near the end!

Let stand for 5 minutes when done, then enjoy!

Notes

If you have additional sauce leftover, feel free to put it on top!
