You guys, I cannot believe it’s November! That means it’s my favorite time of year, and the holidays are well on their way. I never feel anywhere near prepared enough for all the events coming my way – the parties, the gifts, the onslaught of birthdays in my family – there is so much going on that it’s hard to keep up, let alone be ready for everything.
One of the things I struggle with during this time of year is having easy, healthy appetizers and snacks for our holiday get-togethers. There are so many heavy foods that most of the time, I want to eat something lighter, but still festive. It isn’t easy to find that!
After some experimenting over the years, I know there are a few things I should always keep in the house to be able to put something together quickly. The quick recipe below is one of the easiest things you can put together for last minute guests, and I nearly always have all the ingredients on hand, ready to go. It comes together in just minutes and can even be changed around to your liking!
This recipe uses tomatoes, onions, avocado, and queso fresco cheese. I am of the mind that cheese should accentuate your food, so I always buy cheese that makes me feel good about where it came from. Easy Salsa Bites
Ingredients
Frozen Ready to Eat Mini Phyllo Shells, thawed
Salt and Pepper to taste
Equal parts of:
Diced tomatoes (either fresh or canned) (about 1/2 cup)
Diced onion (about 1/2 cup)
Diced avocado (about 1/2 cup)
Crumbled queso fresco cheese with the Real California Milk Seal (about 1/2 cup)
Instructions
Defrost the phyllo shells and crisp them up in the oven, if desired.
Combine equal parts tomatoes, onion, avocado, and queso fresco in a bowl. Salt and pepper to taste.
Spoon mixture into phyllo shells and serve!
The best thing about this recipe is that you could really do all of it without measuring if you’d like! You can also customize so much – add some spice, switch to a different cheese (with the Real California Milk seal of course), and more.
