I feel like we all battle with our families about food, but never as much as we battle about vegetables. It isn’t even just the kids either – for me, it’s my husband too! Before we got married, my husband told me two things that I’ve since changed his mind on: first, that he didn’t do leftovers (that changed pretty much immediately), and that he didn’t eat vegetables because they “tasted like the ground.” Yes, he actually said that.
Since then, I’ve been slowly introducing more and more veggies into his diet, and when Abbie was born, I made an effort to be sure that she had a well-rounded diet too. I was doing well until the toddler years hit and she started getting pickier (oh, toddlers) – and I had to get more creative. Finding ways to get them into her diet has never been easy, and she’s caught me adding veggies to her food many times. I’m always looking for something new to try, and then I discovered Green Giant Veggie Tots.
I’ve talked about them before, but Green Giant Veggie Tots have been an amazing way to add vegetables to my family’s diet. They really are so good and one of my favorite things to serve! They’re fun, easy to make and eat, and taste delicious. I thought they couldn’t get any better, and then Green Giant came out with two new flavors – Corn and Sweet Potato with Cauliflower.
Every member of our family loves these – to the point that we’re always arguing over who has more of them. My husband’s favorite flavor is the Sweet Potato with Cauliflower, but my favorite is the Corn, hands down. Corn has always been one of my favorite vegetables, and I’ve been eagerly awaiting their arrival in stores so I can stock up on them! Both flavors have a little bit of sweetness to them since corn and sweet potato are naturally sweet, but they’re full of great nutrients. I really feel good about serving them to my family for any meal, but we especially love having them on burger night as a substitute for fries. I love that it packs in extra vegetables without even having to try. Talk about a mom win.
