Like most busy moms out there, I’m always looking for ways to get dinner on the table quickly, especially after a long day at work. I also like to make sure I incorporate healthy foods into our meals to make them balanced. One of my favorites is fajitas!
You can make this with either chicken or beef, but this time I used beef. I made sure to stop by Target this week (because who doesn’t go to Target every week?) and picked up some cheese. Kraft is also offering some great coupons redeemable at Target right now – you can save up to $20!
Monterey jack is one of my favorite cheeses, and I love that Kraft now sells it already shredded – it’s such a time saver (I love Monterey Jack so much I was shredding my own cheese on weeknights…definitely time consuming!).

Beef Fajitas
Serves 4
Ingredients:
1 lb. top round steak
4 bell peppers, any colors, sliced thin
1-2 onions, sliced thin
1-2 Tbsp Olive Oil
salt and pepper to taste
1 bag Kraft shredded Monterey Jack cheese
2 tsp ground cumin
1/2 tsp. ground coriander
1 packet sazon seasoning
Dash of cayenne pepper (or more if you like things spicy!)
4 tortilla wraps
1 can black beans, if desired
Guacamole or avocado, if desired
Directions:
- Heat olive oil in a large skillet over medium heat. Add sliced onions and bell peppers and season with salt and pepper. Cover, stirring occasionally, until the peppers and onions are soft, about 20 minutes.
- Meanwhile, mix together the spices. Rub into the steak, coating both sides. Place on a preheated grill or grill pan. Cook to desired degree of doneness, depending on temperature of pan and thickness of steak. Let rest.
- Once the meat has rested, cut it into thin strips.
- Serve up the fajitas! Each one gets some steak, peppers and onions, black beans, and Kraft Monterey Jack shredded cheese…and guacamole on the side if you’d like. Enjoy!
