Simple Spinach Salad

As you guys know, I bring my lunch to work 95% of the time. It’s not only a huge money saver, but it’s a lot healthier than grabbing lunch out every day. I often take leftovers, but I do take a salad about 2-3 times a week, and often, it’s this one. I love this salad because it’s simple, has a little bit of sweetness, tartness, and crunch, and is customizable. I usually add some sort of protein on top – precooked chicken or a hard boiled egg are my favorites – and I keep a bottle of lite balsamic dressing in the work fridge. Easy and delicious. You can also swap out the cheese, fruit, nuts… like I said, totally customizable depending on what’s in your fridge. Enjoy!

An easy spinach salad perfect for a healthy lunch!

Ingredients
  1. 2 oz. Baby Spinach
  2. .5 oz Crumbled Goat Cheese
  3. .5 oz Dried Cranberries
  4. .3 oz Chopped Pecans
Instructions
  1. Mix all ingredients in a bowl. Top with dressing of your choice (I like a balsamic vinaigrette). Enjoy!
Notes
  1. You can switch out any of the ingredients for something you like better, add protein, extra veggies - it's totally customizable!

  1. This looks and sounds great! I have also done, strawberries, feta and almonds and that is another great combination!

    1. If I liked feta I would totally try that one! Maybe I’ll sub that out for something else!

  2. Ah Jess this has been my biggest downfall with working full time, I spend way too much going out. I need to be better and have made the goal to bring my lunches more, but it is hard when your friends/coworkers want to go out. Sometimes I will bring my lunch with me to wherever they are so I can still have the social aspect of it haha Thanks for sharing this! It was another kick in the pants I needed to be better 🙂

    1. It really is hard to work in that kind of setting when people are always going out! A salad like this is such a great option because it’s really easy and portable… and honestly, half the time I don’t bother with the dressing. I’ll try to post more of my lunch tricks!

  3. I love salads like this–and should make them more! It occurred to me as I was looking at your beautiful pictures that I think my kids would like this, too. Do you ever saute the pecans with seasonings or candy them? That’s my favorite 🙂

    1. I haven’t done anything to the pecans… mostly because I’m trying to make this in a hurry. Maybe something to try on a weekend!
