Happy Monday! So, I had planned to show you all Nichole’s baby shower…but then I somehow messed up with getting the pictures on my computer, so you’ll have to wait for that. I thought instead I’d share some of my favorite recipes with you guys in honor of Cinco de Mayo…which of course I haven’t really celebrated properly since college. We could make a mean margarita in our little college apartment! (We drank a lot of them…which definitely doesn’t happen anymore!)
Anyway, here’s some of my favorites, in case you don’t know what to make tonight!
We’re actually having this for dinner tonight, but with chicken instead. Delicious and super easy! Plus, it’s a great way to get lots of veggies in – gotta have those peppers and onions! The leftovers also make a decent salad, or addition to your scrambled eggs or omelette.
Seriously, the best I’ve ever had. It involves a bit of chopping, but it’s so worth it. I’d post my own picture of the finished product…but I’ve never really had any left to take a pretty picture of. #sorrynotsorry Here’s the photo from PW’s website…drooling yet?
We make these ALL the time, and they are delicious. We usually skip the creamy salsa though, and just pile on our own toppings.
You can try it if you’re ambitious…I am not. I ALWAYS mess up rice when I try to do it from scratch…so we’ll be having this one, from the trusty box. It’s good and always turns out well!
Because they’re necessary for today. You can make them from scratch, or buy the bottle of Skinnygirl Margarita and call it a day. I don’t judge.

All that food has me drooling! While I think I have a pretty stellar guacamole recipe, I may have to check out the pioneer women’s. I love all her stuff! Happy Cinco de Mayo!
I know, right? I love me some guacamole. Her recipe is good – the best part is, you get some pico de gallo out of it too!
