Just wanted to pop in real quick to wish all of you a very Happy Mother’s Day, and to share what we’re eating this week!
Saturday: Apricot Glazed Pork Tenderloin, Herbed Brown Rice, and Cauliflower – The pork was a new recipe, and it’s delicious! I’ll hopefully be sharing that soon!
Sunday: Roast Chicken, Potatoes, and Asparagus
Monday: Beef and Broccoli
Tuesday: Spicy Asian Noodles with Chicken
Wednesday: Spring Gnocchi with Vegetables
Thursday: Homemade Pizza
Friday: Jump Up!

I have been wanting to make something like the apricot glazed pork for sometime. However, my husband isn’t a fan of sweet and meat being put together! But I like the savory and sweet combination myself, so I might just make it, and see what he thinks. 😉

It surprised me with how good and easy it was – it’s not as sweet as you might think! Plus, I happen to think pork and fruit go really well together!
That makes me want to try it even more! 🙂
