So, it’s March 30th…and today it snowed. This is seriously the never-ending winter. I’m hoping that it’ll warm up enough soon so that we can spend some time outside, and thankfully it does look like it’ll warm up this week.
Anyway, I’ve been meaning to link up with Jessica with our meal planning for weeks. I grocery shop on Friday nights, so our menu always starts with Saturday. Here’s what we’ve had/will have this week:
Saturday: Pasta with Bacon and Leeks – from Food Network magazine’s March issue. It was good, but I think I’m going to try a few variations on it before sharing it. I felt like it was missing a little something and it was a bit too high in points for my taste.
Sunday: Roasted Chicken, Roasted Potatoes/Mashed Potatoes (I make both since I love mashed potatoes and Chris doesn’t like them at all), and Roasted Asparagus.
Monday: Taco night! I use Sunny Anderson’s recipe, and it’s delicious. We usually have spanish rice too…from a box. Rice is the one thing I’m pretty terrible at, so the box works better.
Tuesday: Spicy Asian Chicken with Rice Noodles and a Snow Pea/Water Chestnut Blend. This is a recipe from one of my Cooking Light cookbooks, and it’s one of Chris’ favorites. It also uses 2 cups of cooked chicken, so I always make it a week we roast a whole chicken so we have that handy.
Wednesday: Turkey Burgers and Sweet Potato fries. No recipe for this – I just kind of throw seasonings into the ground turkey and grill the patties. The sweet potato fries? Frozen from Wegmans and super convenient.
Thursday: Salmon and Green Beans. I’ll broil the salmon with some olive oil, salt, and pepper and probably just boil the green beans.
Friday: Jump Up night – as in jump up and get it yourself! We do this every Friday since I’m usually tired of cooking all week. Abbie usually has leftovers or some frozen ravioli with pesto.
That’s our plan for the week! What kind of meals do you have planned?

Your week sounds great! We’re also doing tacos, and I’m so with you on the spanish rice from a box. (I’ve made it from scratch before, but it’s too much work for not much pay-off.) I like the term “jump-up night.” We just have leftovers a lot and I make my husband cook every other week.
Rice not from a box is just too much work. Glad I’m not the only one!
My mom never cooked on Sunday nights. It was fend for yourself night for us!

Jump Up Friday – I feel like this is something we all grow up with 😉 Easiest day for Mama, and super fun to whip something up on our own.
In one form or another, we did! My mom used to make the exception that she would cook if it was making us an omelette.

does Abbie eat what you and Chris eat on the other nights (you mentioned her on Friday). I’m impressed if she is eating those other dinners!! We are stuck in a chicken nugget rut with Z!
